Ingredients
The following ingredients have 10 Servings
- 2 pounds Haricot Verts or other slender green beans, trimmed
- 5 tablespoons Sherry wine vinegar
- 1/8 cup Olive oil or walnut oil
- 3 tablespoons Chives chopped, fresh
- 3 tablespoons Parsley chopped, fresh
- 3 tablespoons Shallot minced
- 1/2 cup Basil small leaves
- 2 Pears small firm but ripe, peeled, cored, cut into matchstick size strips
- 1/2 cup Walnuts chopped
- 3 ounces Parmesan cheese shaved with veg peeler
Instruction
- Cook haricot verts in large pot of boiling salted water, about six min or until crisp-tender. Drain, rinse with cold water. Drain well, set aside. Whisk oil, vinegar, chives, parsley, shallots in large bowl. Add haricot verts, basil, pears and walnuts, and toss gently. Season with salt & pepper. Top with Parmesan.
