The following ingredients have 4 Servings
  • 2 tablespoon(s) kosher salt
  • 3 - green onions, thinly sliced with tops
  • 3 tablespoon(s) olive oil, extra virgin
  • 1/3 teaspoon(s) pepper, freshly ground
  • 2 tablespoon(s) red wine vinegar
  • 2 tablespoon(s) dijon mustard
  • - MUSTARD YOGURT INGREDIENTS
  • 1 - roasting chicken
  • 1 tablespoon(s) lemon peel
  • 1 teaspoon(s) garlic powder
  • 2 tablespoon(s) brown sugar
  • 2 tablespoon(s) cumin
  • 1 tablespoon(s) cayenne pepper
  • 1/4 cup(s) paprika
  • 2 tablespoon(s) pepper, freshly ground
  • 2/3 cup(s) yogurt, low-fat, plain

Instruction

  • Mix rub ingredients together. This mix will keep for several months in an airtight container.
  • Rub on chicken at least 4 hours before cooking.
  • Cook in 350 oven or on a grill with indirect heat until internal temperature is 165 degrees.
  • Mustard Yogurt Dip: Mix yogurt mustard ingredients together. This can be used as a dip with the chicken, if so desired.
