  • 80 grams caster sugar (plus 2 tbsp to dust paper with)
  • 2 large free-range eggs
  • 80 grams self-raising flour
  • 340 grams lemon curd (shop bought or homemade)
  • 150 ml double cream
  • 50 grams icing sugar
  • 0.5 tsp elderflower cordial
  • 1 meringue nest (crumbled)
  • 1 tbsp gold confetti sprinkles (to decorate)
