Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons butter or olive oil
  • 4 medium cloves garlic (crushed)
  • 1 large yellow onion (finely chopped)
  • 4 small organic russet potatoes (peeled and cut into 1/4" cubes)
  • 4 medium carrots (peeled and cut into 1/8" cubes)
  • 8 cups chicken stock
  • 3 cups rotisserie chicken meat (cut into bite sized pieces)
  • 2 teaspoons kosher salt
  • freshly ground black pepper to taste
  • 1 small bunch or handful flat leaf parsley
  • 1 dried bay leaf
  • 1 teaspoon red wine vinegar
  • OPTIONAL: 1/2 pound cleaned greens (cut into bite sized pieces (spinach, chard, collards, kale, etc.))
