Ingredients

The following ingredients have 4 Servings
  • 5 Golden Yukon potatoes (medium size)
  • 2 tablespoons olive oil
  • 1 teaspoon Himalayan salt
  • 1/4 Teaspoon freshly ground pepper
  • 1 tablespoon fresh rosemary leaves (chopped)
  • 1 1/2 teaspoons apple cider vinegar
  • 2-3 sprigs rosemary ((optional for garish serving decoration))

Instruction

  • Preheat the oven to 400 degrees F. Line a large baking pan with parchment paper or generously spray it with cooking oil.
  • Dice the golden potatoes into 1/2-inch cubes. Transfer to a large bowl.
  • In a small bowl mix together olive oil, apple cider vinegar, salt, pepper, and chopped rosemary leaves. Pour over the potatoes and toss to coat.
  • Transfer the prepared potatoes to the baking sheet. Spread them evenly so the potatoes do not overlap.
  • Bake for 40 minutes, flipping the potatoes after 20 minutes so that they do not burn. Serve right away as aside dish (optional with fresh rosemary leaves on top).
