Ingredients
The following ingredients have 4 Servings
- 5 Golden Yukon potatoes (medium size)
- 2 tablespoons olive oil
- 1 teaspoon Himalayan salt
- 1/4 Teaspoon freshly ground pepper
- 1 tablespoon fresh rosemary leaves (chopped)
- 1 1/2 teaspoons apple cider vinegar
- 2-3 sprigs rosemary ((optional for garish serving decoration))
Instruction
- Preheat the oven to 400 degrees F. Line a large baking pan with parchment paper or generously spray it with cooking oil.
- Dice the golden potatoes into 1/2-inch cubes. Transfer to a large bowl.
- In a small bowl mix together olive oil, apple cider vinegar, salt, pepper, and chopped rosemary leaves. Pour over the potatoes and toss to coat.
- Transfer the prepared potatoes to the baking sheet. Spread them evenly so the potatoes do not overlap.
- Bake for 40 minutes, flipping the potatoes after 20 minutes so that they do not burn. Serve right away as aside dish (optional with fresh rosemary leaves on top).
