Ingredients

The following ingredients have 5 Servings
  • 2 1/2 lbs Parsnips chopped into 1 inch pieces
  • 1 Whole bulb of Garlic peeled (about 10 cloves)
  • 1/4 cup + 2 Tbs EVOO divided
  • 1/4 cup Cashew milk or milk of your choice
  • 2-3 Tbs freshly chopped Chives
  • Sea Salt and Pepper to taste
  • Cooking spray

Instruction

  • Preheat oven to 400 degrees Fahrenheit
  • Spray a large sheet pan with cooking spray
  • Add Parsnips and Garlic
  • Drizzle 2 Tbs EVOO over everything
  • Sprinkle Sea Salt and Pepper over Parsnips
  • Roast in the oven 30 minutes or until a fork pierces easily through the thickest part of the Parsnips
  • Place Parsnips and Garlic in a food processor or high speed blender (you may need to work this in batches depending on the size of your food processor)
  • Add 1/4 cup EVOO, Cashew Milk, and Chives
  • Blend until creamy (like mashed potato consistency), you may need to add more EVOO or Milk depending on how creamy you want these
  • Taste and add more Salt or Pepper if needed
  • Top with additional Chives if desired
  • Enjoy!
