Ingredients
The following ingredients have 5 Servings
- 2 1/2 lbs Parsnips chopped into 1 inch pieces
- 1 Whole bulb of Garlic peeled (about 10 cloves)
- 1/4 cup + 2 Tbs EVOO divided
- 1/4 cup Cashew milk or milk of your choice
- 2-3 Tbs freshly chopped Chives
- Sea Salt and Pepper to taste
- Cooking spray
Instruction
- Preheat oven to 400 degrees Fahrenheit
- Spray a large sheet pan with cooking spray
- Add Parsnips and Garlic
- Drizzle 2 Tbs EVOO over everything
- Sprinkle Sea Salt and Pepper over Parsnips
- Roast in the oven 30 minutes or until a fork pierces easily through the thickest part of the Parsnips
- Place Parsnips and Garlic in a food processor or high speed blender (you may need to work this in batches depending on the size of your food processor)
- Add 1/4 cup EVOO, Cashew Milk, and Chives
- Blend until creamy (like mashed potato consistency), you may need to add more EVOO or Milk depending on how creamy you want these
- Taste and add more Salt or Pepper if needed
- Top with additional Chives if desired
