  • 3 cups vegetables for roasting (carrots, Brussel sprouts, cauliflower, broccoli)
  • 1 avocado
  • 1/2 cup plain (fat-free Greek yogurt)
  • 1 clove garlic minced
  • 2 teaspoon fresh lime juice
  • 1/2 teaspoon freshly ground black pepper
  • 2 to 4 tablespoon crumbled blue cheese

Instruction

  • Roast vegetables at 450 25 to 30 minutes.
  • Peel, seed, and mash an avocado.
  • Stir avocado with yogurt, garlic, lime juice, and black pepper.
  • Fold in crumbled blue cheese.
  • Refrigerate until ready to serve.
