Ingredients

The following ingredients have 4 Servings
  • 1 Eggplant, diced
  • 1 Zucchini, diced
  • 1 Yellow Squash, diced
  • 8 White Mushrooms, halved
  • 1/2 Red Onion, diced
  • 3 Cloves Garlic, minced
  • 2 Plum Tomatoes, diced
  • 1 tsp. Fresh Thyme
  • 1 tbsp. Fresh Rosemary, chopped
  • 1/2 tsp. Kosher Salt
  • 1/4 tsp. Black Pepper
  • 1/4 c. Extra Virgin Olive Oil

Instruction

  • Preheat oven to 425 degrees F.
  • Wash skins on the eggplant, zucchini and yellow squash; then remove ends and cut into bite sized pieces. 
  • In a large bowl, add all ingredients and mix until well combined. Place on a baking sheet and roast for 30 minutes, turning halfway.
