Ingredients
The following ingredients have 4 Servings
- 1 Eggplant, diced
- 1 Zucchini, diced
- 1 Yellow Squash, diced
- 8 White Mushrooms, halved
- 1/2 Red Onion, diced
- 3 Cloves Garlic, minced
- 2 Plum Tomatoes, diced
- 1 tsp. Fresh Thyme
- 1 tbsp. Fresh Rosemary, chopped
- 1/2 tsp. Kosher Salt
- 1/4 tsp. Black Pepper
- 1/4 c. Extra Virgin Olive Oil
Instruction
- Preheat oven to 425 degrees F.
- Wash skins on the eggplant, zucchini and yellow squash; then remove ends and cut into bite sized pieces.
- In a large bowl, add all ingredients and mix until well combined. Place on a baking sheet and roast for 30 minutes, turning halfway.
