Ingredients

The following ingredients have 6 Servings
  • 8 cups chopped cauliflower (or one large head of cauliflower)
  • 1/3 cup olive oil
  • 4 garlic cloves (minced)
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. cumin
  • 3/4 tsp. salt (or to taste)
  • Chopped cilantro or microgreens

Instruction

  • Preheat oven to 400 degrees F. In a large bowl, mix cauliflower with all of the listed ingredients (except for the garnish) and toss until well combined.
  • Spread cauliflower out evenly on a baking sheet in a single layer.
  • Roast for 20 minutes. Remove from oven and flip cauliflower. Roast for an additional 10-20 minutes or until cauliflower is tender and slightly browned and crispy on the edges. Garnish with micro greens or cilantro before serving, if desired.
