The following ingredients have 4 Servings
  • 2 pounds Roma tomatoes
  • 4 tablespoons extra virgin olive oil (+ extra for roasting tomatoes)
  • 1 medium sweet onion (diced)
  • 1 medium carrot (diced)
  • 1 splash red wine vinegar
  • ¼ cup all-purpose flour
  • 10 ounces tomato paste
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • 1 quart vegetable stock
  • ½ cup whole milk
  • Kosher salt and freshly cracked black pepper (to taste)
  • 1 parmesan cheese rind (approximately 3-inches by 2-inches (optional) (see notes))
  • basil (fresh, chopped, for serving)
