The following ingredients have 4 Servings
- 2 pounds Roma tomatoes
- 4 tablespoons extra virgin olive oil (+ extra for roasting tomatoes)
- 1 medium sweet onion (diced)
- 1 medium carrot (diced)
- 1 splash red wine vinegar
- ¼ cup all-purpose flour
- 10 ounces tomato paste
- 1 bay leaf
- ½ teaspoon dried thyme
- 1 quart vegetable stock
- ½ cup whole milk
- Kosher salt and freshly cracked black pepper (to taste)
- 1 parmesan cheese rind (approximately 3-inches by 2-inches (optional) (see notes))
- basil (fresh, chopped, for serving)
