Ingredients
The following ingredients have 6 Servings
- 2 pounds sweet potatoes washed (peeled and cut into 2 inch chunks)
- GLAZE:
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter (melted)
- 2 tablespoons pure maple syrup (or honey)
- 3 tablespoons light brown sugar (tightly packed)
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/4 teaspoon Freshly cracked black pepper (as needed)
- GARNISH:
- Chopped parsley
Instruction
- Preheat oven to 400 degrees F.
- Line a baking sheet pan with parchment paper and set aside.
- Combine all the GLAZE ingredients in a medium bowl.
- Place sweet potatoes chunks in a large bowl and pour the glaze on top. Toss to combine.
- Transfer potatoes onto the prepared baking sheet. Arrange in a single layer.
- Bake on 400F for 20 minutes. Use a spatula to turn over and bake another 10-20 minutes or until tender when pierced with a fork.
- Serve warm, garnished with parsley.
