Ingredients

The following ingredients have 6 Servings
  • 2 pounds sweet potatoes washed (peeled and cut into 2 inch chunks)
  • GLAZE:
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (melted)
  • 2 tablespoons pure maple syrup (or honey)
  • 3 tablespoons light brown sugar (tightly packed)
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon Freshly cracked black pepper (as needed)
  • GARNISH:
  • Chopped parsley

Instruction

  • Preheat oven to 400 degrees F.
  • Line a baking sheet pan with parchment paper and set aside.
  • Combine all the GLAZE ingredients in a medium bowl.
  • Place sweet potatoes chunks in a large bowl and pour the glaze on top. Toss to combine.
  • Transfer potatoes onto the prepared baking sheet. Arrange in a single layer.
  • Bake on 400F for 20 minutes. Use a spatula to turn over and bake another 10-20 minutes or until tender when pierced with a fork.
  • Serve warm, garnished with parsley.
