- 3 pounds fresh red bell peppers ((about 8 medium peppers) stemmed, seeded and quartered)
- 1 medium onion, (quartered)
- 1 garlic bulb
- 2 tablespoons olive oil
- 1 (14 ounce) can fire roasted tomatoes
- 2 cups vegetable broth, (plus more, as needed)
- 1 tablespoon red wine vinegar
- 1 tablespoon paprika
- 2 teaspoons fresh thyme, (or 1/2 teaspoon dried)
- Salt and pepper to taste
- 2 cups bread cubes
- 1 1/2 tablespoons olive oil
- 1 garlic clove, (minced)
- Salt and pepper to taste
- Tahini, (thinned with water as needed)
- Fresh parsley or basil
