Ingredients

The following ingredients have 10 Servings
  • 1/2 cup roasted red bell pepper (diced, drained and patted dry)
  • 8 oz light cream cheese (softened)
  • 1 Tbls Dijon mustard
  • 2 cups shredded cheese (any kind, I used a Mexican blend, divided)
  • ½ cup Parmesan cheese
  • 1½ Tbls onion (minced)
  • 2 cloves garlic (minced)
  • 12 oz SeaPak Shrimp Scampi (1 package)

Instruction

  • Preheat oven to 350 degrees.
  • Spray an 8x8 inch baking dish with cooking spray and set aside.
  • Combine all ingredients except for the shrimp scampi and half a cup of the shredded heese in a bowl and mix until well combined. You can also beat with a mixer.
  • Stir in frozen shrimp scampi.
  • Bake for 20 minutes and stir to distribute the butter and seasonings on the shrimp scampi. Sprinkle on remaining 1/2 cup shredded cheese and return to the oven for another 10 minutes or until cheese is melted and bubbly and shrimp is cooked though.
  • Serve hot with crackers, baguette slices, bagel crisps, etc.
