Ingredients
The following ingredients have 4 Servings
- 1/4 cup fresh basil
- 2 teaspoons lemon juice (fresh squeezed, optional)
- 16 oz canned cannellini beans (drained and rinsed)
- 7 oz roasted red bell peppers (jar, drained and rinsed)
- 1 garlic clove
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instruction
- Combine basil, lemon juice, beans, peppers and garlic in a food processor. Pulse until smooth.
- With motor running, slowly add the olive oil until smooth. Stir in salt and pepper and taste. Adjust seasonings if needed.
