Ingredients

The following ingredients have 4 Servings
  • 1/4 cup fresh basil
  • 2 teaspoons lemon juice (fresh squeezed, optional)
  • 16 oz canned cannellini beans (drained and rinsed)
  • 7 oz roasted red bell peppers (jar, drained and rinsed)
  • 1 garlic clove
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instruction

  • Combine basil, lemon juice, beans, peppers and garlic in a food processor. Pulse until smooth.
  • With motor running, slowly add the olive oil until smooth. Stir in salt and pepper and taste. Adjust seasonings if needed.
