Ingredients

The following ingredients have 4 Servings
  • 12 ounces cauliflower (cut into florets)
  • 1/3 cup Tahini paste
  • 1/3 cup olive oil + 1 tablespoon
  • 1/4 cup roasted red pepper (chopped)
  • 1 1/2 tablespoons lemon juice
  • 2-3 small garlic cloves ((see notes))
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt

Instruction

  • Preheat oven to 425F.
  • Add the cauliflower to a microwave safe bowl, place a plate over the top and cook in the microwave for 7 minutes.
  • Add 1 tablespoon of olive oil over the top. Sprinkle with smoked paprika, cumin, salt and pepper, then toss to coat. Pour onto a baking sheet pan lined with parchment paper or a Silpat and bake for 10 minutes or until the cauliflower is tender and golden.
  • While the cauliflower is still warm, add to the bowl of a food processor along with the remaining ingredients. Pulse until everything is thoroughly combined and smooth. Add a little more olive oil if the mixture is too thick.
  • Serve with a drizzle of olive oil and sprinkling of smoked paprika over the top. Enjoy with fresh cut celery, cucumber, zucchini sticks, carrots, pork rinds or seasoned tortilla chips!
