Ingredients
The following ingredients have 4 Servings
- 1 pound jumbo shrimp (peeled and deveined)
- 1 12 oz jar roasted red peppers
- 1 Tbsp olive oil
- kosher salt, pepper
- 1 8 oz jar pesto (minced)
- 1/4 cup grated parmesan cheese (plus more to sprinkle over top)
- 1 tsp crushed red pepper flakes
- slices of toasted baguette/crostini
Instruction
- Pat the shrimp dry with paper towels.
- Drain the jar of roasted red peppers and put the peppers in a blender or food processor. Blend 15 to 20 seconds or until smooth.
- Set a skillet over medium high heat, add the olive oil and when oil is hot add the shrimp and sprinkle with kosher salt and pepper. Cook 3 to 4 minutes, stirring occasionally. Remove the shrimp from the skillet.
- Add the blended red peppers to the same skillet over medium heat, add the pesto, parmesan cheese and crushed red pepper flakes. Cook 1 to 2 minutes, stirring occasionally. Add the shrimp and stir until evenly mixed.
- Serve with toasted baguette/ crostini and with more parmesan cheese sprinkled over top.
