Ingredients

The following ingredients have 4 Servings
  • 1 pound red seedless grapes cut into clusters and left on the stems
  • 4 Teaspoons honey
  • 1 Teaspoon extra virgin olive oil
  • 1/2 Teaspoon flaky sea salt
  • 1/2 cup mascarpone
  • 1 1/2 Tablespoons spiced or regular dark rum
  • 1 Teaspoon finely grated orange zest

Instruction

  • Preheat your oven to 475 degrees and position the rack in the center of the oven.
  • Gently Toss the grape clusters, 2 Teaspoons of honey, olive oil, and salt in a large bowl. Spread the grape clusters on a large rimmed cookie sheet in a single layer. Turn the grapes over halfway through the baking time until they are collapsed, juicy and some what caramelized, about 15 minutes.While you wait for the grapes to roast - stir together the mascarpone, rum, zest and remaining 2 Teaspoons of honey in a medium bowl. When the grapes are done roasting remove the grapes from the cookie sheet to serving dishes. Serve warm with a dollop of the sweetened mascarpone.
