Ingredients

The following ingredients have 4 Servings
  • 1 ½ pounds patty pan squash
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • salt & pepper (to taste )
  • 2 teaspoons fresh parsley
  • ½ tablespoon fresh basil
  • ½ teaspoon fresh dill
  • 1 tablespoon olive oil
  • ½ teaspoon lemon zest
  • kosher salt & black pepper (to taste )

Instruction

  • Preheat oven to 425°F.
  • Wash patty pan squash and trim the top and bottom. Cut into 1" bite sized pieces. Toss with olive oil, garlic and salt & pepper to taste.
  • Roast 12-15 minutes or just until tender-crisp. Broil 1 minute if desired.
  • While squash is roasting, finely chop herbs. Whisk herbs with olive oil, lemon zest and a small pinch of salt.
  • Toss herb oil with squash and serve warm.
