Ingredients
The following ingredients have 4 Servings
- 1 ½ pounds patty pan squash
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- salt & pepper (to taste )
- 2 teaspoons fresh parsley
- ½ tablespoon fresh basil
- ½ teaspoon fresh dill
- 1 tablespoon olive oil
- ½ teaspoon lemon zest
- kosher salt & black pepper (to taste )
Instruction
- Preheat oven to 425°F.
- Wash patty pan squash and trim the top and bottom. Cut into 1" bite sized pieces. Toss with olive oil, garlic and salt & pepper to taste.
- Roast 12-15 minutes or just until tender-crisp. Broil 1 minute if desired.
- While squash is roasting, finely chop herbs. Whisk herbs with olive oil, lemon zest and a small pinch of salt.
- Toss herb oil with squash and serve warm.
