Ingredients

The following ingredients have 8 Servings
  • 2 pounds asparagus (trimmed)
  • 3 tablespoons olive oil
  • Kosher salt and freshly ground black pepper (to taste)
  • 1/2 cup freshly grated Parmesan
  • 2 tablespoons balsamic vinegar

Instruction

  • Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  • Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, to taste; gently toss to combine. Top with Parmesan.
  • Place into oven and roast for 10-12 minutes, or until tender but crisp.
  • Serve immediately, drizzled with balsamic vinegar.
