Ingredients
The following ingredients have 4 Servings
- 4 ounces Cremini mushrooms, (sliced 1/2″ thick)
- 8 ounces fresh green beans, (cut into 1 1/2″ pieces)
- 4 ounces sliced red onion
- 1 to 2 Tablespoons olive oil
- 1 Tablespoon balsamic vinegar
- 1 Tablespoon soy sauce
- salt and pepper to taste
- 1 Tablespoon Parmesan Garlic Butter (see recipe below)
- 1 stick (1/4 pound) unsalted butter, (softened)
- 1/3 cup finely grated parmesan cheese
- 2 cloves fresh garlic, (minced)
- 1 Tablespoon finely chopped fresh parsley
- 1/2 teaspoon dried basil
Instruction
- Preheat oven to 400°F or preheat grill.
- Mix all ingredients above except the Parmesan Garlic Butter in a plastic freezer bag or non-reactive container until all the vegetables are well covered.
- Spread in a single layer on a baking sheet and roast in oven for approximately 15-20 minutes until vegetables are tender. (If cooking on the grill then the cooking time will be less. Use a grill basket and toss the vegetables occasionally.)
- When done, remove vegetables and place in a medium bowl.
- Top with 1 Tablespoon of the Parmesan Garlic Butter.
- Toss and serve immediately.
