Ingredients

The following ingredients have 4 Servings
  • 4 ounces Cremini mushrooms, (sliced 1/2″ thick)
  • 8 ounces fresh green beans, (cut into 1 1/2″ pieces)
  • 4 ounces sliced red onion
  • 1 to 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon soy sauce
  • salt and pepper to taste
  • 1 Tablespoon Parmesan Garlic Butter (see recipe below)
  • 1 stick (1/4 pound) unsalted butter, (softened)
  • 1/3 cup finely grated parmesan cheese
  • 2 cloves fresh garlic, (minced)
  • 1 Tablespoon finely chopped fresh parsley
  • 1/2 teaspoon dried basil

Instruction

  • Preheat oven to 400°F or preheat grill.
  • Mix all ingredients above except the Parmesan Garlic Butter in a plastic freezer bag or non-reactive container until all the vegetables are well covered.
  • Spread in a single layer on a baking sheet and roast in oven for approximately 15-20 minutes until vegetables are tender. (If cooking on the grill then the cooking time will be less. Use a grill basket and toss the vegetables occasionally.)
  • When done, remove vegetables and place in a medium bowl.
  • Top with 1 Tablespoon of the Parmesan Garlic Butter.
  • Toss and serve immediately.
