The following ingredients have 4 Servings
  • 1 whole chicken ((about 4 pounds) or use pre-cut half chickens, 2 pieces)
  • 2 tsp minced garlic
  • 1 tsp crushed black peppercorn
  • 3 tablespoons freshly squeeze lemon juice
  • 3 tablespoons extra virgin olive oil
  • ½ tbsp paprika
  • 1 tsp dried thyme ((about 1 ½ tbsp fresh thyme))
  • 1½ teaspoons kosher salt ((use less or more according to your liking))
  • 1 pound baby potatoes
