- 1 whole chicken ((about 4 pounds) or use pre-cut half chickens, 2 pieces)
- 2 tsp minced garlic
- 1 tsp crushed black peppercorn
- 3 tablespoons freshly squeeze lemon juice
- 3 tablespoons extra virgin olive oil
- ½ tbsp paprika
- 1 tsp dried thyme ((about 1 ½ tbsp fresh thyme))
- 1½ teaspoons kosher salt ((use less or more according to your liking))
