Ingredients
The following ingredients have 4 Servings
- 1 medium cauliflower
- 1 1/2 tbsp olive oil
- 2 1/2 tsp curry powder
- 1 tsp tumeric
- 1/2 tsp cumin
- 1 clove garlic (crushed)
- 1/2 tsp salt
- 6 cups spinach
- 1/3 cup thinly sliced red onion
- 3/4 cup red grapes (cut in half or thirds)
- 1/3 cup almond flakes (toasted)
- 1/4 cup olive oil
- 1 1/2 tbsp apple cider vinegar
- 1 tsp honey (or other sweetener)
- 1/4 tsp pepper
- 1/4 tsp salt
Instruction
- Preheat the oven to 200 degree Celsius (390 degrees Fahrenheit)
- Cut the cauliflower into florets and place in a bowl. Whisk together the olive oil, curry powder, turmeric, garlic and salt. Pour the sauce over the cauliflower and toss to ensure they are well coated.
- Lay the cauliflower out evenly on a baking tray and bake for 25-30 minutes or until the cauliflower is tender and golden. Flip the florets half way through cooking to ensure they do not burn.
- While the cauliflower is roasting, wash the grapes and cut into halves or thirds depending on the size. Thinly slice the red onion and place it in a bowl along with the spinach, grapes and almond flakes.
- To make the dressing, whisk together the olive oil, apple cider vinegar and honey, season with salt and pepper.
- Add the roasted cauliflower to the salad and toss with the dressing. Serve.
