Ingredients
The following ingredients have 4 Servings
- 2 cups frozen corn or 4 ears of fresh whole corn (roasted on grill)
- 2/3 cup black beans (drained)
- 1/2 cup red onion (diced)
- 2 tablespoons jalapeno (finely chopped)
- 1/2 cup red pepper (diced)
- 3 tablespoons fresh cilantro (finely chopped)
- Juice of one lime
- 1 tablespoon of oil
- 2 cloves garlic (minced)
- 1 teaspoon salt
Instruction
- To roast frozen corn, heat oven to 450 degrees. Spread corn on a sheet pan and roast in oven for 10 minutes. To roast whole fresh corn, place cleaned corn on a medium-heat grill for 5 minutes, turning so each side is slighted charred. Once finish grilling, cut corn off the cob and place in a medium bowl.
- Add corn to a medium bowl. Add beans, peppers, onion, garlic, cilantro, lime juice, oil and salt.
- Toss together and serve with tortilla chips.
