The following ingredients have 4 Servings
- 1 cup brown rice
- 2 cups water
- 1/3 cup peanuts (or 1/2 cup peanut butter)
- 1/2 cup canned coconut milk
- 3 cloves garlic (Omit garlic for low FODMAP)
- 1 fresh jalapeño (you can use pickled if that's all you've got)
- 1 teaspoon gluten-free tamari or soy sauce
- 2 Tablespoons fresh ginger
- 1 pound chicken thighs
- 2 bell peppers (1 red, 1 yellow)
- 1 medium zucchini
