Ingredients

The following ingredients have 5 Servings
  • 12 chicken thighs ((bone in and with skin on))
  • Juice of 1 lemon
  • 1/4 cup of olive oil
  • Salt and Pepper
  • 2 cups of plain Greek yogurt
  • 2 cloves garlic ((peeled and finely minced))
  • 4 stalks of spring onion ((finely chopped))
  • 1/2 English cucumber ((peeled and finely diced))
  • 2 Tbsp of chopped fresh cilantro
  • 2 Tbsp of chopped fresh mint leaves
  • 2 Tbsp of chopped fresh dill
  • Salt and pepper to taste

Instruction

  • Preheat your oven to 400 F. Place the chicken on a shallow roasting pan (skin side up). Pour the lemon juice and olive oil over the chicken. Add a pinch of salt and pepper. Rub this all over the chicken. Pop this into the oven and let it roast for the next 45 minutes to 1 hour or until the chicken is cooked through and have nice golden brown color
  • Meanwhile, prepare the Greek yogurt sauce by mixing all the ingredients for the sauce. Have a taste and add more salt and pepper if needed. Chill in the refrigerator while waiting for the chicken. When ready to serve, serve the chicken with the sauce on the side
