Ingredients

The following ingredients have 4 Servings
  • 2 lbs. chicken thighs (bone-in, skin on)
  • 3 to 4 sweet potatoes (sliced)
  • 4 shallots (sliced)
  • 4 garlic cloves (minced)
  • Fresh tarragon sprigs
  • Sea salt and freshly ground black pepper
  • 3 tbsp. olive oil
  • 2 tbsp. red wine vinegar
  • 2 tsp. Dijon mustard
  • 2 tsp. Italian seasoning
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat your oven to 375 F.
  • Season each chicken thigh with minced garlic, sea salt, and freshly ground black pepper.
  • Arrange the sliced sweet potatoes at the bottom of a baking dish and cover them with the sliced shallots. Season to taste with sea salt and black pepper.
  • Place the chicken thighs, skin side up, on top of the shallots.
  • In a bowl, combine all the ingredients for the herb vinaigrette.
  • Drizzle the vinaigrette all over the baking dish.
  • Place some fresh tarragon sprigs over the chicken.
  • Bake in the oven for 45 to 50 minutes.
