Ingredients
The following ingredients have 4 Servings
- 2 lbs. chicken thighs (bone-in, skin on)
- 3 to 4 sweet potatoes (sliced)
- 4 shallots (sliced)
- 4 garlic cloves (minced)
- Fresh tarragon sprigs
- Sea salt and freshly ground black pepper
- 3 tbsp. olive oil
- 2 tbsp. red wine vinegar
- 2 tsp. Dijon mustard
- 2 tsp. Italian seasoning
- Sea salt and freshly ground black pepper
Instruction
- Preheat your oven to 375 F.
- Season each chicken thigh with minced garlic, sea salt, and freshly ground black pepper.
- Arrange the sliced sweet potatoes at the bottom of a baking dish and cover them with the sliced shallots. Season to taste with sea salt and black pepper.
- Place the chicken thighs, skin side up, on top of the shallots.
- In a bowl, combine all the ingredients for the herb vinaigrette.
- Drizzle the vinaigrette all over the baking dish.
- Place some fresh tarragon sprigs over the chicken.
- Bake in the oven for 45 to 50 minutes.
