Ingredients

The following ingredients have 3 Servings
  • 3 chicken breasts
  • 1 jar marinated artichoke hearts
  • 1 red onion (cut in 8ths)
  • 1 red bell pepper (quartered and then sliced in half)
  • 1 cup baby carrots
  • 1 bunch asparagus (ends trimmed)
  • 2 tsps minced garlic
  • 1 tsp sea salt

Instruction

  • 5 hours before the dish goes in the oven add the chicken breasts, artichoke hearts (with juice), onion and bell pepper into a bowl. Marinate for a few hours.
  • Pre-heat the oven to 375F.
  • Strain the artichoke marinade.
  • Spray a baking pan with nonstick spray. Place the chicken breasts on the pan and arrange the vegetables around the chicken. Season with salt, pepper, and garlic.
  • Bake for 45-50 minutes or until the chicken breasts are done.
