Ingredients

The following ingredients have 2 Servings
  • 1 bunch carrots ((6-8 carrots), tops trimmed to 1 inch)
  • 1 bunch radishes ((12-14 radishes) tops trimmed)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp summer savory seasoning
  • 3 tbsp olive oil
  • 3 tbsp crumbled feta cheese
  • chopped parsley or chopped carrot top leaves for garnishing
  • 1/2 lemon for serving

Instruction

  • Preheat oven to 400 F. Line a baking sheet with parchment paper (optional).
  • Place carrots and radishes in a single layer. Drizzle with olive oil. Season with salt, pepper and summer savory. Bake for 30 minutes, until tender.
  • Serve immediately, with some lemon juice and feta cheese.
