- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup unsalted pumpkin seeds (optional)
- 1 cup (1 oz) fresh cilantro
- 2 tablespoons extra-virgin olive oil
- 3 garlic cloves (peeled)
- Juice of 1 lime
- 1 teaspoon grated lime zest (preferably organic)
- 1 (1 inch) knob fresh ginger
- 2 tablespoons water
- 1 teaspoon Dijon mustard
- 1/3 cup tahini
- Juice of 1 lemon
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 to 4 tablespoons water (plus more if needed)
