The following ingredients have 4 Servings
- 1 lb. butternut squash (cut into 1 inch cubes (about 4 cups))
- 1 onion (sliced)
- 1 tbsp. olive oil
- 1 tsp. maple syrup
- 2 tbsp. panko breadcrumbs
- salt to taste
- 1-14 oz. can cannellini beans (drained and rinsed)
- 2 tbsp. good balsamic vinegar
- 1 1/2 tsp. olive oil
- 1 garlic clove
- 1/4 tsp. salt
- 4 slices good sandwich bread (optionally toasted)
- arugula (baby spinach or sprouts)
