Ingredients

The following ingredients have 4 Servings
  • 12 oz spaghetti
  • 9 oz cherry tomatoes (or 1 1/4 cups)
  • 3 tbsp extra virgin olive oil
  • 2 oz goat cheese
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Instruction

  • Preheat oven to 375F.
  • Cook spaghetti according to package directions and drain.
  • Meanwhile, cut broccolini into 2 inch pieces and place in a large bowl with tomatoes, oil, garlic powder, salt and pepper to taste. Combine to coat veggies. You may also combine on the baking sheet.
  • Place veggies on a large baking sheet and bake at 375F for 25 min.
  • Mix roasted broccolini and tomatoes with drained spaghetti and stir in goat cheese.
