Ingredients
The following ingredients have 4 Servings
- 2 cups sliced carrots (, cut diagonally )
- ½ small onion (, rough chopped)
- 3 cloves garlic
- 2 tablespoons olive oil (, divided)
- ½ teaspoon kosher salt (, divided)
- ½ teaspoon coarsely ground black pepper (, divided)
- ¼ teaspoon smoked paprika
- 3 tablespoons barbecue sauce
- 3 chicken drumsticks
Instruction
- Heat oven to 450 degrees F (230 degrees C).
- Place the cut carrots, onions and garlic in a small baking dish. Add 1 tablespoon of the olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper, and smoked paprika and toss to coat. Set aside.
- In a small bowl, whisk together the BBQ Sauce, 1 tablespoon olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Place the chicken drumsticks in a small bowl and pour BBQ Sauce mixture over the chicken. Using your fingers, make sure the sauce mixture coats each chicken drumstick.
- Lay the chicken on top of the vegetables in the baking dish.
- Bake for 40 minutes.
- Remove from the oven and cover baking dish with foil. Let chicken rest for 10 minutes.
