Ingredients

The following ingredients have 4 Servings
  • 2 cups sliced carrots (, cut diagonally )
  • ½ small onion (, rough chopped)
  • 3 cloves garlic
  • 2 tablespoons olive oil (, divided)
  • ½ teaspoon kosher salt (, divided)
  • ½ teaspoon coarsely ground black pepper (, divided)
  • ¼ teaspoon smoked paprika
  • 3 tablespoons barbecue sauce
  • 3 chicken drumsticks

Instruction

  • Heat oven to 450 degrees F (230 degrees C).
  • Place the cut carrots, onions and garlic in a small baking dish. Add 1 tablespoon of the olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper, and smoked paprika and toss to coat. Set aside.
  • In a small bowl, whisk together the BBQ Sauce, 1 tablespoon olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Place the chicken drumsticks in a small bowl and pour BBQ Sauce mixture over the chicken. Using your fingers, make sure the sauce mixture coats each chicken drumstick.
  • Lay the chicken on top of the vegetables in the baking dish.
  • Bake for 40 minutes.
  • Remove from the oven and cover baking dish with foil. Let chicken rest for 10 minutes.
