Ingredients
The following ingredients have 4 Servings
- 2 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar (buy the best you can afford)
- ¼ teaspoon freshly cracked pepper
- 16 oz block of fresh mozzarella cheese
- 1½ cups cherry tomatoes (sliced into circles)
- 3 large large garlic cloves (roughly chopped)
- 25 whole Crackers (I used Triscuit crackers here but Ritz cracker would be just as good.)
- 1 tablespoon sea salt to taste
- 8 whole fresh basil leaves for garnish
Instruction
- Preheat oven to 400 F. degrees.
- In a small bowl mix the olive oil, balsamic vinegar, salt, and pepper, set aside.
- Slice the tomatoes into little circles.
- Peel, crush and roughly chop the garlic.
- Add the tomatoes and garlic to the bowl with the oil and vinegar mixture.
- Toss well and pour out onto a shallow baking pan.
- Roast for 15 minutes occasionally tossing.
- Increase the oven temperature to 450 F. after the 15 minutes are up. Roast an additional 15 minutes tossing occasionally.
- Remove from oven.
- Top each cracker with a square of mozzarella cheese, about ¼ of a teaspoon of the roasted tomatoes and garlic.
- Top each cracker with a ribbon of basil and a sprinkle of sea salt.
