Ingredients
The following ingredients have 4 Servings
- 6 ripe pears (peeled, cored and chopped)
- ½ cup granulated sugar
- ½ cup Sweet Riesling Wine (I used Chateau Ste Michelle Harvest Select Sweet Riesling - very affordable)
- ¼ cup water
- ½ cup light corn syrup
Instruction
- Combine the sugar, wine, water and corn syrup in a medium saucepan. Stir to combine. Add the chopped pears and heat on medium until the mixture comes to a boil. Simmer for about 8-10 minutes or until the pears are very soft.
- Remove the pear mixture from the heat and allow it to cool for a few minutes. Transfer the mixture to a professional grade blender or process in batches in a food processor. Puree until the pears are completely smooth. Pour the warm mixture through a fine mesh sieve into a clean bowl. Push the solids through the sieve into the bowl.
- Pour the puree into a large Ziplock bag and seal. Set the bag in a large mixing bowl filled with ice and water. Allow the pear puree to chill for 30 minutes then process in an ice cream maker according to the manufacturer directions.
- Store in a sealed, freezer safe container for at least 4 hours before serving.
