Ingredients
The following ingredients have 4 Servings
- 1 ½ cups flour
- ½ cup granulated sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup sour cream
- 6 Tablespoons butter (melted and cooled slightly)
- 2 eggs
- 1 teaspoon vanilla
- 2 cups rhubarb (diced)
- 1 Tablespoon granulated sugar
- ¼ teaspoon cinnamon
Instruction
- Preheat oven to 400°F
- Prepare muffin tin by spraying with a non-stick spray or lining with paper liners.
- Mix dry ingredients together in a large bowl.
- In a separate bowl mix sour cream, melted butter, eggs and vanilla until smooth.
- Lightly add sour cream mixture into the dry ingredients. Stir until incorporated.
- Mix in rhubarb.
- Divide into muffin cups sprayed or lined with paper liners.
