Ingredients

The following ingredients have 4 Servings
  • 1 ½ cups flour
  • ½ cup granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup sour cream
  • 6 Tablespoons butter (melted and cooled slightly)
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups rhubarb (diced)
  • 1 Tablespoon granulated sugar
  • ¼ teaspoon cinnamon

Instruction

  • Preheat oven to 400°F
  • Prepare muffin tin by spraying with a non-stick spray or lining with paper liners.
  • Mix dry ingredients together in a large bowl.
  • In a separate bowl mix sour cream, melted butter, eggs and vanilla until smooth.
  • Lightly add sour cream mixture into the dry ingredients. Stir until incorporated.
  • Mix in rhubarb.
  • Divide into muffin cups sprayed or lined with paper liners.
