Ingredients

The following ingredients have 2 Servings
  • 2 tablespoons Garlic-Infused Oil,
  • 1 cup (72 g) chopped leeks, (green parts only)
  • 1, 12 ounce (340 g) bottle Classic FODY BBQ Sauce
  • 1 pound (455 g) rhubarb, (trimmed and chopped)
  • 1/2 cup (107 g) firmly packed light brown sugar
  • 2 tablespoons molasses
  • 2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons celery seed
  • 1 1/2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1/2 to 1 teaspoon ground chipotle pepper, (use the larger amount if you like things spicy)
  • Kosher salt
  • Freshly ground black pepper

Instruction

  • Heat a large saucepan over medium heat and add oil, swirling to coat the bottom of the pot. Add leeks and sauté for a couple of minutes until softened but not browned. Add the FODY BBQ Sauce, rhubarb, brown sugar, molasses, vinegar, celery seed, cumin, smoked paprika and as much chipotle pepper as you like and stir together well. Add some salt and several grinds of black pepper.
  • Adjust heat and simmer, covered, until rhubarb is soft, about 10 minutes. Adjust salt and pepper and any other seasoning you might want.
