Ingredients
The following ingredients have 10 Servings
- 1 cup white sugar
- 1/3 cup vegetable oil
- 2/3 cup buttermilk
- 1 egg large
- 2 egg whites large
- 1 tsp vanilla essence
- 1 cup fresh strawberries diced
- 3/4 cup rhubarb diced
- 2 cup plain flour
- 1 tsp ground cinnamon
- 2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
Instruction
- Preheat oven to 200C, grease muffin tray.
- In a large bowl whisk the sugar, oil, buttermilk, egg, egg whites and vanilla until smooth, then set aside.
- In a separate bowl, combine strawberries and rhubarb with ½ cup of the flour. Toss until well coated.
- Use a wooden spoon to mix buttermilk mixture with the remaining flour, cinnamon, baking soda and salt. Combine strawberries and rhubarb.
- Spoon mixture into prepared muffin tins.
- Bake for 20-25 minutes or until cooked.
- Cool on a cake rack for 10 minutes before removing muffins from tin.
