Ingredients

The following ingredients have 10 Servings
  • 1 cup white sugar
  • 1/3 cup vegetable oil
  • 2/3 cup buttermilk
  • 1 egg large
  • 2 egg whites large
  • 1 tsp vanilla essence
  • 1 cup fresh strawberries diced
  • 3/4 cup rhubarb diced
  • 2 cup plain flour
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt

Instruction

  • Preheat oven to 200C, grease muffin tray.
  • In a large bowl whisk the sugar, oil, buttermilk, egg, egg whites and vanilla until smooth, then set aside.
  • In a separate bowl, combine strawberries and rhubarb with ½ cup of the flour. Toss until well coated.
  • Use a wooden spoon to mix buttermilk mixture with the remaining flour, cinnamon, baking soda and salt. Combine strawberries and rhubarb.
  • Spoon mixture into prepared muffin tins.
  • Bake for 20-25 minutes or until cooked.
  • Cool on a cake rack for 10 minutes before removing muffins from tin.
