Ingredients

The following ingredients have 10 Servings
  • 12 medium shrimp tails
  • 1/3 cup cilantro stems, finely chopped
  • 3 tablespoons fish sauce
  • 4 tablespoons lime juice
  • 2 teaspoons sugar
  • 1 tablespoon jalapeno chile, finely chopped
  • 1 1/2 cups ripe mango, cubed into small pieces (I used 1 large champagne mango)
  • 1/4 cup scallions, white parts, finely sliced
  • 4 tablespoons lime juice
  • 1 pinch salt
  • 10 twists of black pepper
  • 3 cups ripe avocado, quartered and then sliced into chunks (I used 2 avocados)
  • 1/4 cup scallions, green and white parts, sliced very thinly
  • 2 teaspoons jalapeno, sliced paper thinly into rounds, seeds included
  • 6 mint leaves, torn up
  • 2/3 cup very hot water
  • 1 packet (1 Tbsp) gelatin
  • 1/3 cup lime juice
  • 1 tablespoon sugar
  • 1 pinch salt
  • 1 tablespoon fish sauce
