The following ingredients have 10 Servings
- 12 medium shrimp tails
- 1/3 cup cilantro stems, finely chopped
- 3 tablespoons fish sauce
- 4 tablespoons lime juice
- 2 teaspoons sugar
- 1 tablespoon jalapeno chile, finely chopped
- 1 1/2 cups ripe mango, cubed into small pieces (I used 1 large champagne mango)
- 1/4 cup scallions, white parts, finely sliced
- 4 tablespoons lime juice
- 1 pinch salt
- 10 twists of black pepper
- 3 cups ripe avocado, quartered and then sliced into chunks (I used 2 avocados)
- 1/4 cup scallions, green and white parts, sliced very thinly
- 2 teaspoons jalapeno, sliced paper thinly into rounds, seeds included
- 6 mint leaves, torn up
- 2/3 cup very hot water
- 1 packet (1 Tbsp) gelatin
- 1/3 cup lime juice
- 1 tablespoon sugar
- 1 pinch salt
- 1 tablespoon fish sauce
