Ingredients

The following ingredients have 4 Servings
  • 450 g baby potatoes
  • 1 bay leaf
  • 2 1/2 cups vegetable stock
  • 1 Tbsp grapeseed oil
  • 1 tsp sesame oil
  • 1 medium yellow onion slices
  • 1 clove garlic minced
  • 1 red bell pepper cleaned and slivered
  • 1 heaping tablespoon red curry paste
  • 1 Tbsp grated lemongrass
  • 1 tsp grated ginger
  • 3 basil leaves plus a few more for garnish
  • 200 ml can bamboo shoots
  • 400 ml coconut cream
  • salt and white pepper to taste
  • 3/4 cups Jasmine rice
  • 1 1/2 cups warm water
  • 1/2 tsp sesame oil
  • 2 sprigs saffron
  • pinch of sugar and salt
