The following ingredients have 4 Servings
- 450 g baby potatoes
- 1 bay leaf
- 2 1/2 cups vegetable stock
- 1 Tbsp grapeseed oil
- 1 tsp sesame oil
- 1 medium yellow onion slices
- 1 clove garlic minced
- 1 red bell pepper cleaned and slivered
- 1 heaping tablespoon red curry paste
- 1 Tbsp grated lemongrass
- 1 tsp grated ginger
- 3 basil leaves plus a few more for garnish
- 200 ml can bamboo shoots
- 400 ml coconut cream
- salt and white pepper to taste
- 3/4 cups Jasmine rice
- 1 1/2 cups warm water
- 1/2 tsp sesame oil
- 2 sprigs saffron
- pinch of sugar and salt
