Ingredients

The following ingredients have 4 Servings
  • 16 oz. dried red beans
  • 1 Tbsp olive oil
  • 1 large yellow onion (diced)
  • 2 stalks celery (diced)
  • 1 Tbsp Cajun seasoning
  • 1 tsp salt
  • 2 Tbsp fresh parsley (chopped)
  • 1 Tbsp garlic (minced)
  • 16 oz. andouille or smoked sausage (sliced and quarted)
  • 6 cups low-sodium chicken stock (divided)
  • 4 cups water
  • 1 cup white rice (uncooked)
  • 8 large bell peppers (I like to use a variety of colors.)
  • ½ cup Panko bread crumbs
  • ¼ cup green onions (sliced)
  • hot sauce (optional)
