Ingredients

The following ingredients have 2 Servings
  • 1 large zucchini grated
  • 1 cup broccoli grated or finely cut
  • 1 tsp crushed garlic
  • 1 green chilli finely chopped
  • 1/2 finely chopped onion
  • chili powder
  • 1 small cup rolled oats (for binding)
  • 1 tsp olive oil
  • salt as per taste.

Instruction

  • In a bowl, combine the zucchini, broccoli, garlic, green chilies, onion, and chili powder, salt and mix together until well combined.
  • Heat up a non-stick frypan with a bit of olive oil, once the pan is hot, spoon some of the mixtures into the pan (i made little ones but you can make one big one too) let it cook for about 2-5mins or until u can see that it is cooked and the bottom is browned.
  • Then flip them over and cook on the other side for another few minutes until its browned. Zucchini and Broccoli Fritters are ready to serve it with salsa or tomato ketchup.
