Ingredients
The following ingredients have 4 Servings
- 3 Big Boiled potatoes
- 1 cup Peanuts
- 1 tsp Cumin seeds
- 1 tsp Pepper powder
- 1 tsp Cumin powder
- 1 tsp Lemon juice
- 1 big Finely chopped green chili
- 1 tbsp crushed peanuts
- 5-6 Curry leaves
- 1 tbsp Groundnut Oil (preferably)
- A handful of fresh coriander leaves
- Salt as per taste
Instruction
- Peel and Chop boiled potatoes into small chunks and keep it aside in a bowl.
- Meanwhile, keep all the other ingredients ready in a plate and start the preparations.
- Heat 1 tbsp oil in a kadai (pan) on a medium flame and once the oil is hot add cumin seeds and allow it to crackle for 8-10 seconds.
- Now add peanuts in it and Fry the peanuts on a medium flame till they are golden brown in color.
- This will take around 2 minutes.
- Once the peanuts are fried and are brown in color add curry leaves, finely chopped green chilies and boiled potato chunks in it.
- Add all the other spices like cumin powder, pepper powder, salt, lemon and crushed peanuts in it.
- Stir it very lightly and with a spoon just once so that all the spices are mixed well. Do not over stir it as the potatoes will become soggy.
- Now cook the aloo sabzi on a low flame till 1-2 minutes.
- Switch off the flame and remove the sabzi in a bowl and garnish with some freshly chopped coriander leaves.
- Serve it hot with Rajgira and Kuttu ki Sabzi and panner or Makhana ke Kheer.
