Ingredients
The following ingredients have 2 Servings
- 2 cups fresh shelled peas
- 1 cup fresh mint sprigs
- 1/4 cup fresh coriander leaves
- 2 tablespoons lemon juice
- 1 small clove minced garlic
- 1 small cup chopped tomatoes to garnish
- 1 tsp. olive oil
- Salt
Instruction
- Bring a small pot of salted water to a boil.
- Add peas, cook until tender, about 8-10 minutes.
- Drain and run under cold water.
- In a food processor, pulse peas, mint leaves, coriander leaves, lemon juice, garlic, and olive oil for about a minute.
- Remove it a bowl and serve it fresh with vegetable Crudités.
