Ingredients

The following ingredients have 2 Servings
  • 1 zucchini (medium sized, cut into rounds)
  • 1 squash (medium sized, cut into rounds)
  • 1 Japanese eggplant (medium sized, cut into rounds)
  • 1 tsp salt
  • 1 tsp pepper (freshly ground)
  • 1 tsp basil (dried)
  • 1/2 tsp oregano (dried)
  • 1/2 tsp olive oil
  • 2 cup soubise sauce

Instruction

  • Preheat the oven to 400 degrees. Use broil settings
  • In a mixing bowl, add the vegetables, olive oil and spices. Mix well
  • In an oven-safe pan, arrange the vegetables in alternating colors.
  • Place the vegetables in the oven and allow to broil for about 25 minutes
  • Remove the vegetables from the oven
  • On a plate, arrange the Ratatouille Stack by using a pair of tongs
  • Top with with Soubise Sauce. Here is my take on the Soubise Sauce
