Ingredients
The following ingredients have 2 Servings
- 1 zucchini (medium sized, cut into rounds)
- 1 squash (medium sized, cut into rounds)
- 1 Japanese eggplant (medium sized, cut into rounds)
- 1 tsp salt
- 1 tsp pepper (freshly ground)
- 1 tsp basil (dried)
- 1/2 tsp oregano (dried)
- 1/2 tsp olive oil
- 2 cup soubise sauce
Instruction
- Preheat the oven to 400 degrees. Use broil settings
- In a mixing bowl, add the vegetables, olive oil and spices. Mix well
- In an oven-safe pan, arrange the vegetables in alternating colors.
- Place the vegetables in the oven and allow to broil for about 25 minutes
- Remove the vegetables from the oven
- On a plate, arrange the Ratatouille Stack by using a pair of tongs
- Top with with Soubise Sauce. Here is my take on the Soubise Sauce
