  • 12 oz frozen raspberries (defrosted)
  • 1/4 cup heavy cream
  • 2 tbsp light corn syrup
  • 5 1/2 oz semi-sweet chocolate (finely chopped)
  • 1 oz butter, at room temperature ((2 tbsp))
  • 1 cup heavy cream
  • 25 regular (not miniature marshmallows, about 6.75 oz)
  • 1/4 cup raspberry puree reduction (made during the ganache steps)
  • deep pink gel food coloring (optional)
  • Fresh berries and chocolate shavings to garnish
