Ingredients
The following ingredients have 8 Servings
- 2 24 ounce Bob Evans garlic mashed potatoes ((about 5 cups))
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 ounce packet ranch seasoning and salad dressing mix
- 2 cups shredded Mild Cheddar cheese
- 1 1/2 cups cooked bacon (crumbled)
- 1 celery rib (fine diced)
- 2 scallions (sliced)
Instruction
- Prepare mashed potatoes, according to package directions. Allow to cool.
- Combine mashed potatoes, sour cream, mayonnaise, and ranch dressing mix in a large bowl. Stir until well combined.
- Add cheese, bacon, celery, and scallions.
- Stir until combined. Cover and refrigerate until ready to serve.
- Potato salad is best after the flavors have had a chance to meld (at least 2 hours of chilling).
