  • 2 Slices of Gluten-Free Bread (of choice)
  • 1 Cup Fruity Rainbow Rocks Cereal
  • 1/2 Cup Lite Culinary Coconut Milk
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Pure Madagascar Bourbon Vanilla Extract
  • Toppings:
  • Pure Maple Syrup
  • Vegan Ice Cream (of choice)
  • Homemade Marshmallow Fluff

Instruction

  • In a wide bowl, whisk together the coconut milk, baking powder, cinnamon, and vanilla.
  • Pour the cup of cereal out on a plate and place next to the bowl.
  • Dip each slice of bread in the coconut milk mixture before coating both sides with the cereal on the plate.
  • Heat a greased non-stick skillet over medium-high heat and cook both sides of the French toast slices for about 3-4 minutes.
  • Transfer to a plate and top with anything you'd like!
