Ingredients

The following ingredients have 4 Servings
  • 4 Flatbread (or pita)
  • 3 tomatoes (washed; trimmed and thinly sliced)
  • 6 ozs fresh Mozzarella (drained and sliced)
  • 6 Tbsps prepared Basil pesto
  • salt (to taste)
  • freshly ground Black pepper (to taste)

Instruction

  • Preheat the raclette grill.
  • Cut flatbread or pita in half horizontally and place on raclette pan. Arrange the tomatoes and sliced mozzarella in a single overlapping layer on the flatbread. Spoon pesto on top of the tomatoes and mozzarella and season with salt and pepper; to taste.
  • Place under the raclette grill. Cook until the mozzarella cheese is melted and golden.
