Ingredients

The following ingredients have 15 Servings
  • 2/3 cup warm water (about 110F)
  • 1/4 teaspoon active dry yeast
  • 2 cups all purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 pound shrimp, shells and tails removed
  • dry white wine
  • a large sprig of dill
  • salt
  • 1 cup fresh dill
  • 1 1/2 cups olive oil, canola oil, or other oil (for the dill oil)
  • 1 large egg yolk, at room temperature
  • 2 teaspoons lemon juice (or pureed and strained unripe strawberry if you want to go very new Nordic)
  • 1 teaspoon mustard
  • 1/4 teaspoon salt
  • 1 teaspoon cold water
  • 3/4 cup neutral flavored oil such as canola or safflower (for the mayo)
