  • 1 1/4 cups (225 g) quinoa, rinsed and drained
  • 1 yellow bell pepper, seeded and cubed
  • 3 tbsp (45 ml) olive oil
  • 2 zucchini, halved lengthwise and thinly sliced
  • 1 can (14 oz/398 ml) quartered artichoke hearts, rinsed and patted dry
  • 1 garlic clove, chopped
  • 1 tomato, cut into thin wedges
  • 1/4 cup (10 g) flat-leaf parsley leaves, torn
  • 1 lemon, finely grated zest and juice
